What began as a small homemade pasta shop opened by Luciana Mosconi in Matelica, in Italy's Marche region, grew into one of the country's leading egg pasta makers after the Pennazzi family partnered with her in 1992. The dough is still rolled without mechanical pressure and dried slowly, just as it was in the original shop.
