Region: Gragnano, Campania, Italy
Established: 1876
Since 1876, Pastificio Gentile has shaped pasta in Gragnano, the town whose narrow streets were built to catch the sea breeze for drying noodles in the sun. The Zampino family, who took over in the 1980s, still uses bronze dies and slow-air drying to give every shape its signature rough, sauce-loving texture.
