Alta Valle Scrivia

In the mountain village of Montoggio, in Liguria's Ligurian Apennines, the Minaglia family has shaped pasta by hand since 1984. Using bronze dies and slow, low-temperature drying, they preserve the traditional textures and regional shapes of the Genoese countryside, from rustic scuccuzzù to hand-cut pappardelle. Every batch reflects decades of family craftsmanship, made to taste like it came straight from a Ligurian kitchen.
